Watermelon, Fresh Mint and Fetta Salad

INGREDIENTS
• Watermelon diced to cubes
• 1/4 bunch Mint
• 250g baby spinach leaves
• 100g Danish Feta cut to cubes
• 4 Tbsp Simply Stirred Caramelised White Balsamic Dressing with Lime
• salt and pepper to taste

METHOD
. Wash and dry baby spinach leaves and place on your serving dish
. Wash and dry fresh mint, remove leaves for use
. Place the cubed Watermelon, fetta and mint leaves over the baby spinach
. drizzle with Simply Stirred Caramelised White Balsamic Dressing with Lime
. Season to taste… Enjoy
