Snow pea Salad with Caramelised Soy and Ginger Dressing
Ingredients:
1 Bag of snow peas (approx. 2 large handfuls) – topped and tailed
1 Bag green beans (approx. 2 large handfuls) – topped and tailed and chopped in half
1 punnet cherry tomatoes halved
1 Spanish onion sliced
½ cup fresh parsley coarsely chopped
2 tbsp Simply Stirred Caramelised Soy Dressing with Ginger
Method:
• Bring to boil a pot of water on the stove.
• Add the beans and snow peas to the pot for blanching (only leave them in for 30 seconds – we want them to stay nice and crisp)
• Remove beans and snow peas and strain
• Add all ingredients including Simply Stirred Caramelised Soy Dressing with Ginger, into a large mixing bowl and toss.
• Serve warm or cold.
